Chicken Broccoli Stir Fry

- ¾ cup chicken broth
- 2 teaspoons sugar
- 3 teaspoons toasted sesame oil
- 1 Tablespoon soy sauce
- 2½ teaspoons corn starch
- 2½ Tablespoons cold water
- 6 Tablespoon vegetable oil, divided
- 3½ cups broccoli cut into small bites
- 2½ cups sliced mushrooms
- 1 cup toasted cashews
- 1 Tablespoon fresh ginger, minced
- 1½ garlic cloves, finely minced
- 1 pound chicken, cut into 1 inch cubes
- ½ teaspoon salt
- ¼ teaspoon pepper
- In a small bowl, whisk together chicken broth, sugar, sesame oil, and soy sauce. Stir well and set aside.
- In another small bowl, combine corn starch and cold water. Set aside.
- Heat 3 Tablespoons of oil in a large skillet over medium-high heat. Add broccoli, mushrooms, and cashews. Cook for 5 to 6 minutes, until the broccoli and mushrooms are tender.
- Stir in ginger and garlic, and cook for 1 minute.
- Remove the vegetables from the skillet and wipe the skillet clean.
- Return the skillet to the stove and add the remaining 3 Tablespoons of oil. Add chicken, salt, and pepper. Cook for 3 to 4 minutes per side, or until the chicken is fully cooked.
- Return the broccoli mixture to the skillet with the chicken.
- Pour the chicken broth mixture over the chicken and broccoli, and cook for 1 minute.
- Add the corn starch mixture to the skillet and bring to a boil. Cook until the sauce begins to thicken.
- Serve immediately.
