1. Open-Faced Puffs

Ingredients:

  • 250 g puff pastry;
  • fresh chicken eggs;
  • hard cheese;
  • bacon;
  • spices and herbs to taste.

Instructions:

Roll out the dough and cut it into 6-10 cm square pieces. Line a baking sheet with parchment paper and arrange the squares on top. Quickly fold up the edges of each piece by about 1 cm to prevent the filling from spilling.

Crack one egg into each square, layer with bacon, then sprinkle with herbs and grated cheese. Place in a preheated oven and bake for 15 minutes. That's it!

2. Berry Cream Roll

Ingredients:

  • 150 g puff pastry;
  • 150 g cream cheese;
  • 3-4 tbsp sugar;
  • 1 tsp lemon or orange zest;
  • fresh or frozen berries.

Instructions:

Combine cream cheese, sugar, and zest, then beat together with a mixer. For a tangy twist, add a tablespoon of lemon juice. Roll out the dough and spread the creamy mixture over it, leaving a couple of centimeters from the edge to seal the roll later.

Arrange your favorite berries on top of the cream layer, then carefully roll it up, pinching the edge to seal. Before baking, slice the roll into 3-4 cm pieces and place them on a baking sheet. Bake at 190°C for 10-15 minutes. Optionally, drizzle with icing sugar (mix a cup of powdered sugar with a couple of tablespoons of milk and vanilla).

3. Spanakotiropites

Ingredients:

  • 200 g puff pastry;
  • 150 g feta cheese;
  • 150 g frozen spinach;
  • 2 eggs;
  • a couple of tablespoons of olive oil (for flavor, optional);
  • 1 large onion;
  • 1 garlic clove;
  • other spices and herbs to taste.

Instructions:

First, thaw the spinach, squeeze it dry, and chop it. Sauté the chopped onion in olive oil. In a separate bowl, mash the feta with the eggs until smooth. Stir in the spinach, fried onions, a couple of tablespoons of olive oil, your preferred herbs, garlic, spices, and salt.

You can make one large closed pie or individual servings: roll out the dough and cut into small squares about 10 cm wide. Place a couple of spoonfuls of the filling on each piece. Fold each into a triangle and press the edges to seal. Bake at 200°C for 20 minutes!
