This is the kind of soup that is incredibly easy to prepare yet tastes like you've spent hours in the kitchen. I grew up enjoying this timeless soup as a child, and every bowl takes me back to a joyful memory.

The subtle sweetness of leeks pairs beautifully with the earthy flavor of potatoes. I prefer mine smooth and creamy, but if you like a chunkier texture, you can use a potato masher instead of an immersion blender for larger pieces. This soup comes together in under 30 minutes and can easily be made gluten-free. For a dairy-free version, simply skip the milk and add extra broth.

Ingredients

  • 4 medium leeks (dark green stems removed)
  • 1/2 large white onion, chopped
  • 2 medium russet potatoes, peeled and cut into cubes
  • 1 tablespoon flour (use AP gluten free flour for GF)
  • 1 tbsp butter
  • 4 cups chicken stock (use vegetable broth for vegetarians)
  • 1/2 cup 2% milk
  • salt and fresh pepper

Directions

  1. Thoroughly rinse leeks to remove any grit. I typically slice them horizontally and separate the rings to ensure no dirt remains. Once clean, coarsely chop them.
  2. In a medium soup pot, melt butter over low heat and stir in flour.
  3. Mix well with a wooden spoon. This step thickens the soup and adds a rich depth of flavor.
  4. Add chicken stock, leeks, onion, and potatoes. Bring the mixture to a boil.
  5. Cover and reduce heat to low, simmering for about 20-25 minutes until the potatoes are tender.
  6. Using an immersion blender, puree the soup until smooth. Stir in the milk and season with salt and pepper to taste.
  7. Serve right away.
