This is the kind of soup that is incredibly easy to prepare yet tastes like you've spent hours in the kitchen. I grew up enjoying this timeless soup as a child, and every bowl takes me back to a joyful memory.

I prefer mine smooth and creamy, but if you like a chunkier texture, you can use a potato masher instead of an immersion blender for larger pieces. Ingredients
- 4 medium leeks (dark green stems removed)
- 1/2 large white onion, chopped
- 2 medium russet potatoes, peeled and cut into cubes
- 1 tablespoon flour (use AP gluten free flour for GF)
- 1 tbsp butter
- 4 cups chicken stock (use vegetable broth for vegetarians)
- 1/2 cup 2% milk
- salt and fresh pepper
Directions
- Thoroughly rinse leeks to remove any grit. I typically slice them horizontally and separate the rings to ensure no dirt remains. Once clean, coarsely chop them.
- In a medium soup pot, melt butter over low heat and stir in flour.
- Mix well with a wooden spoon. This step thickens the soup and adds a rich depth of flavor.
- Add chicken stock, leeks, onion, and potatoes. Bring the mixture to a boil.
- Cover and reduce heat to low, simmering for about 20-25 minutes until the potatoes are tender.
- Using an immersion blender, puree the soup until smooth. Stir in the milk and season with salt and pepper to taste.
- Serve right away.
