- For the crust: grind the cookies in a blender. Mix with sugar and cocoa. Melt the butter and combine with the cookie crumbs. Press into a baking dish, using the bottom of a glass to compact it firmly (you can also do this by hand while wearing a plastic bag). Form a small rim about 1 cm high. Bake in an oven preheated to 180°C for 10 minutes. Let cool. Grease the edges of the pan with oil and line the sides with a strip of baking paper.
- For the filling: lightly whisk the cream cheese with the sugar using a whisk until smooth. Add the flour and cocoa, then mix. Incorporate the eggs one at a time, beating gently. Stir in the sour cream and liqueur, then mix thoroughly. Pour the mixture over the cookie crust. Gently tap the pan on the counter to release any air bubbles. Bake at 130°C for 50–60 minutes. When done, do not remove immediately; leave the oven door slightly ajar and allow to cool. Place the pan in the refrigerator to chill completely.
