Ingredients
For the base:
- 140 g chocolate Oreo cookies,
- 30 g melted butter.
For the curd filling:
- 400 g homemade cottage cheese,
- 200 g melted white chocolate,
- 150 g heavy cream (33% fat),
- 2 finely chopped Oreo cookies,
- 1 tbsp instant gelatin.
- Whipped cream and strawberries for decoration.
Cooking method
- Crush the cookies with melted butter in a blender until the mixture resembles wet sand. Press it firmly into the bottom of a springform pan or pastry ring. Refrigerate for 20 minutes.
- Soak the gelatin in 4 tablespoons of cold boiled water for the time indicated on the package.
- Place the cottage cheese, cream, and melted white chocolate in a blender. Pulse until the mixture is smooth and uniform.
- Warm the gelatin in the microwave or a water bath until dissolved, then add it to the cottage cheese mixture. Blend again thoroughly.
- Fold in the chopped Oreo crumbs, mix well, and spoon the filling over the chilled base.
- Refrigerate for several hours until the cheesecake is fully set.
- Before serving, carefully remove from the mold. Garnish with whipped cream and strawberries.
