Instructions for Cauliflower Hash Browns

Procedure

  1. Using a food processor or a manual grater, process the cauliflower until it reaches a rice-like consistency.
  2. In a mixing bowl, whisk together eggs, cauliflower rice, almond flour, coconut flour, garlic powder, and season with salt and pepper.
  3. Warm a skillet over medium heat. When hot, add oil to lightly coat the surface.
  4. Using a 1/4-cup measure, scoop the cauliflower mixture and shape into patties about 3/4-inch thick. Carefully transfer to the skillet. Repeat with the rest of the mixture, cooking in batches if needed.
  5. Fry the hash browns until they turn golden brown, roughly 3 to 4 minutes on each side.
  6. Enjoy right away, or allow to cool and freeze for later meals.

Important Notes on the Recipe

  1. *Important: Pre-riced frozen cauliflower is too coarse for this recipe.
  2. Cauliflower heads differ in size. If yours is larger and produces more riced cauliflower, and the mixture seems too loose, incorporate an extra egg and a tablespoon of flour. Three cups of firmly packed riced cauliflower is the ideal amount for these hash browns.
  3. Baking yields different results. If you opt to bake, reduce the eggs to two. Additionally, broil both sides at the end to attempt a crispy exterior.
