This straightforward cauliflower rice is exceptionally delicious, nutritious, and filling. It’s ideal for a fast, wholesome meal or side dish.

I’m always on the lookout for quick, healthy meals. My father recently started cooking many nutritious dishes, and this recipe came from him. I was skeptical when he praised it, but then my mother also began raving about it. Once I tried it, I was completely converted—and I say this as someone who doesn’t usually like rice. I absolutely loved this dish!

Cauliflower rice has become very popular. I see it in the frozen section at supermarkets, and my local store even makes fresh batches in-house. Although I prefer making my own, I’m glad it’s a trend—it helps me get my kids, who love rice, to willingly eat their vegetables.

Is Cauliflower Rice Healthy?

Yes! It’s extremely good for you. Cauliflower is rich in vitamins and fiber and low in calories.

This cauliflower rice is very flavorful and comes together quickly. It uses only five ingredients. I often eat it as a meal on its own. The recipe makes a large amount, so you can prepare a smaller portion if desired and freeze the rest.

Can You Freeze Cauliflower Rice?

Yes! After grating, place the cauliflower in a freezer bag and lay it flat. When cooking from frozen, add a few extra minutes—it works and tastes great.

You can also serve it as a side dish; it pairs well with many main courses. Once you try this recipe, I’m almost certain you’ll be hooked too!

What You'll Need

  • ¼ cup butter
  • 1 head cauliflower (about 5½ cups when grated)
  • 1 cup frozen peas
  • ½ teaspoon salt
  • ¼ pepper
  1. Use the largest holes of a box grater to shred the entire cauliflower. The result should resemble rice grains.
  2. In a large skillet over medium heat, melt the butter.
  3. Add the shredded cauliflower, salt, and pepper. Cook over high heat for 3–4 minutes, stirring often with a spatula.
  4. Stir in the frozen peas and cook for another 2 minutes.
  5. Serve hot.
