Honey-Sweetened Valentine's Gingerbread Hearts

Dough Ingredients:

  • Honey – 100 g (3 tablespoons)
  • Butter – 100 g
  • Sugar – 50 g (a quarter cup)
  • Egg – 1 pc.
  • Ground cinnamon – 1 teaspoon
  • Ground ginger – 0.5 teaspoon
  • Crushed cloves – ¼ teaspoon
  • Soda – ¼ teaspoon
  • Salt – a pinch
  • Flour – 300-320 g. (2 and 1/3 or 2½ cups).

For glaze:

  • 100 g of powdered sugar;
  • 1.5-2 tablespoons of lemon juice.

Preparation steps:

  1. Place sliced honey and butter into a saucepan. Warm over low heat until the butter fully melts.
  2. Let the melted honey-butter mixture cool a bit, then stir in the sugar. Next, add the beaten egg and combine.
  3. Sift a portion of the flour together with the spices, baking soda, and salt, then mix. Gradually incorporate the remaining flour while kneading until you have a soft, elastic, and smooth dough.
  4. Preheat the oven to 200°C. Line a baking sheet with parchment paper and lightly grease it with butter or dust with flour.
  5. On a lightly floured surface, roll out the dough into a flat sheet and use cookie cutters to shape the gingerbread hearts.
  1. Gather the dough scraps into a ball, re-roll, and cut more shapes. Cover the leftover dough with a towel to keep it warm and pliable for subsequent batches.
  2. Arrange the shaped cookies on the baking sheet, spacing them 2–3 cm apart.
  3. Bake on the middle or upper rack. The baking time ranges from 8–10 to 12–15 minutes, depending on your oven type (electric or gas). The cookies are done when they have puffed slightly, become drier, and taken on a golden-brown color. Avoid overbaking, as they will turn hard. Let the baked cookies cool on the counter while you make the lemon-sugar glaze for decorating.
  1. To prepare the glaze, simply combine powdered sugar with lemon juice until you reach your preferred consistency. Transfer the icing into a piping bag and snip off the tip—the smaller the opening, the finer the design. Decorate your valentines as creatively as you like! You can also color the glaze using beetroot or carrot juice.
