Ingredients:

  • chicken stock – 0.5 liters
  • king prawns – 50-70 grams
  • oyster mushrooms – 30-50 grams – button mushrooms work as a substitute
  • onion – one large head or two small ones
  • ripe tomato – one large
  • chili paste – 1 tablespoon
  • lemongrass – 3-4 stalks
  • galangal (Thai pink ginger) – 3-4 slices – regular ginger can be swapped in
  • fresh or dried chili – 1-3 pieces
  • cilantro (coriander) – one bunch
  • 2 kaffir lime leaves
  • lemon or lime juice – half a citrus fruit
  • fish sauce – 1 tablespoon
  • sugar – 1 teaspoon.

Preparation steps:

  1. Prepare a flavorful chicken stock as the foundation.
  2. While simmering, toss in the rinsed shrimp heads and shells to deepen the flavor.
  3. Slice the lemongrass, galangal, and chili into thin pieces.
  4. Tear the kaffir lime leaves by hand.
  5. Drop these aromatics into the bubbling stock and let them simmer for 5 minutes.
  6. Stir in a tablespoon of chili paste.
  7. Quarter the mushrooms and tomato, and halve the onion.
  8. Wash the peeled shrimp thoroughly and devein them.
  9. Place the onion and mushrooms into the pot, then simmer gently for 5-10 minutes without bringing the liquid to a full boil.
  10. Add the shrimp, tomato, fish sauce, and sugar, give everything a stir, and switch off the burner.
