The Cheesy Garlic Bread Recipe That Hides One Wild Ingredient

One unexpected component turns this Secret Ingredient Cheesy Garlic Bread into the greatest loaf your taste buds will ever encounter!

Anyone who's followed along from the very start (yes, way back in 2008!) already knows that my mother, Noni, fuels every single thing I tackle, in the kitchen and in motherhood.

She perfectly fuses the role of passionate home cook with that of a three-kid super-mom, and her multitasking genius shines brightest in the memory of her chauffeuring the carpool to my field hockey match — handing out steaming apple turnovers à la mode from the driver's seat during every red light.

Happened exactly like that.

She delivered fresh pastries and scoops of ice cream to a packed Suburban of starving middle schoolers — all without leaving the steering wheel. Could there be any further proof? Noni is unstoppable.

This particular formula stands as yet another example of how she elevates the everyday into the extraordinary, leaving you questioning every previous method you've ever used to bake garlic bread.

Forget everything you know about standard garlic bread. The velvety richness comes from a single covert element baked right in.

At first glance it might strike you as odd, yet scroll through the comment section and you'll quickly discover it has earned a loyal 5-star following. (The post first went live in 2011, though I recently refreshed the photography!)

Personally, I adore teaming this cheesy garlic loaf with any of my favorite pasta plates or placing it beside a generous green salad. What's your preferred pairing?

Secret Ingredient Cheesy Garlic Bread

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup shredded Asiago cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup mayonnaise
  • 2/3 cup sliced scallions
  • 2 cloves garlic, minced
  • 1 loaf French bread

Set your oven to 350ºF and let it preheat.

Drop the softened butter, Asiago, Monterey Jack, mayonnaise, scallion slices, and minced garlic into a mixing bowl. Mix thoroughly until everything is evenly incorporated.

Halve the French loaf lengthwise, then coat each cut side generously with the cheesy spread.

Slide the bread into the oven for 7 minutes, then transfer it directly beneath the broiler until the surface turns a rich golden hue, roughly 3 minutes.

Slice the loaf into individual portions and dig in.
