This bowl is a mighty combination, packed with:

For the quickest route to a satisfying meal, simply prepare the chicken and lemon rice, then top with store-bought tzatziki and fresh cucumbers. The chicken and rice form an excellent foundation.

Chicken Shawarma:
- One package of Trader Joe's chicken shawarma (or refer to the notes for a homemade version)
Lemon Rice:
- 1½ cups long-grain white rice
- 1 teaspoon onion powder and 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- 1 tablespoon Better Than Bouillon chicken base
- 2¼ cups water
- Zest from one lemon
Cabbage Salad:
- 2 cups finely shredded red cabbage
- ¼ cup white vinegar
- ¼ cup water
- 2 tablespoons olive oil
- ½ teaspoon salt and ½ teaspoon sugar
Feta Cucumber Sauce:
- ½ cucumber, grated and squeezed to remove excess water
- ¼ cup plain Greek yogurt
- 2 tablespoons olive oil or mayonnaise
- ¼ cup crumbled feta cheese
- 1 garlic clove, grated
- 1 teaspoon dried dill (or 3 tablespoons fresh dill)

- Prepare Lemon Rice: Rinse the rice thoroughly in a colander. Transfer to a medium pot and stir in onion powder, garlic powder, salt, Better Than Bouillon, and water. Bring to a simmer, then cover and cook on very low heat for 18 minutes. Once done, fold in lemon zest and fluff with a fork.
- Make Cabbage Slaw: Combine cabbage, white vinegar, water, olive oil, salt, and sugar. Toss well, adjust seasoning to taste, and set aside to rest while you finish the rest.
- Prepare Feta Cucumber Sauce: Mix grated cucumber, Greek yogurt, olive oil (or mayo), feta, garlic, and dill. Taste and adjust seasoning.
- Cook Chicken Shawarma (Air Fryer): I save this for last so it stays hot. Air fry at 390°F for 9–10 minutes until internal temperature reaches 165°F and the exterior is deeply browned. Alternatively, oven method: place rack in top third of oven, bake at 450°F for 15 minutes, then broil on low for 3–5 minutes until browned. Let rest a few minutes, then chop into bite-sized pieces.
- Assemble Bowls: Spoon rice onto plates, top with chopped chicken shawarma, add a portion of cabbage slaw, and finish with a dollop of feta cucumber sauce.
