You will need 450 grams of strawberries, 300 ml of heavy cream, 15 grams of gelatin, 75 grams of sugar, and berries or mint for decoration.
Soak the gelatin in 5 tablespoons of cold water. Blend the strawberries into a puree. Add sugar to taste. Place the swollen gelatin over low heat and dissolve it without boiling. Let it cool, then gradually stir in the strawberry puree. Set aside 4 tablespoons of the puree in a separate dish. Whip the cream until stiff peaks form. Gently fold the cream into the gelatin-strawberry mixture. Divide the mousse among serving bowls, then drizzle a little of the reserved puree on top of each. Refrigerate until fully set. Serve garnished with fresh berries and mint leaves.

To make the syrup, combine sugar, water, 3 basil sprigs, and the juice and zest of a quarter lemon in a small saucepan. Cover and cook over medium heat for 8 minutes. Strain the syrup. Refrigerate the molds overnight or for 4–5 hours. Dice the strawberries into small cubes, toss with powdered sugar, and spoon over the set panna cotta. Drizzle any released juice on top.
