This speedy Asian chicken soup bursts with classic flavors like fresh ginger and toasted sesame oil—ready in just 10 minutes.

Soup is my lunchtime staple at least two or three days each week. I love how simple, flexible, and nourishing it is—turning basic pantry items and fresh produce into a cozy, satisfying meal.

I find myself making this Asian Chicken and Cabbage Soup over and over. With clever shortcuts like pre-cooked rotisserie chicken and a well-stocked Asian pantry, the entire dish comes together in just ten minutes.

Rather than noodles, I opt for shredded cabbage to keep the soup low in carbs while still packing plenty of protein. That said, rice noodles would be a wonderful substitute. For toppings, feel free to go wild with whatever you have—cilantro, sliced jalapeño, or an extra drizzle of hoisin sauce all work beautifully.

Ingredients

  • 2 teaspoons toasted sesame oil
  • 1 tablespoon ginger minced
  • 1 clove garlic minced
  • chili paste optional
  • 4 cups chicken broth low sodium
  • 2 tablespoons soy sauce low sodium
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 cup cooked chicken breast shredded, such as rotisserie
  • 2 cups cabbage shredded
  • salt and pepper to taste
  • cilantro, jalapeno slices optional garnish

Instructions

  • Warm the sesame oil in a stockpot over medium heat. Add the ginger, garlic, and chili paste, and sauté until fragrant—about 30 seconds.
  • Pour in the chicken broth, soy sauce, rice vinegar, and hoisin sauce. Whisk everything together, then turn the heat to high. Bring to a boil, then stir in the shredded chicken breast and cabbage. Reduce the heat to low and let it simmer until the cabbage is tender, roughly 5 minutes. Season with salt and pepper to your liking. Garnish with cilantro or jalapeño slices before serving.
