As Chinese New Year approaches on February 16, I'm thrilled to share my favorite recipe: Chinese Hot Pot. This beloved dish is a staple during New Year's Eve celebrations, bringing families together around the table for a hearty, satisfying meal.
Hot Pot truly shines in winter, offering warmth on cold nights. There's nothing quite like a bubbling pot of broth packed with an array of fresh ingredients. Its popularity has soared globally—McCormick experts even highlighted it in the 2018 Flavor Forecast! While countless broth variations exist, the simplest Chinese hot pot starts with just chicken broth and ground white pepper. For this version, I've used Kitchen Basics® Original Chicken Stock and McCormick Ground White Pepper.
When it comes to fresh additions, feel free to get creative. A good rule is to include protein (meat or seafood), Chinese greens like Napa cabbage and bok choy, fish balls, tofu, and mushrooms. These staples are shown in the image above.
Traditionally, a special hot pot vessel is used, but an Instant Pot works beautifully and yields authentic results. Simply chop and slice the ingredients, arranging them on plates. Gather everyone around the table with the hot pot at the center. Each person gets a bowl and chopsticks to enjoy the meal.
Start by bringing the broth to a boil, then gradually add ingredients. Begin with Napa cabbage stems (they take longer to cook), followed by meat, seafood, fish balls, tofu, and mushrooms. Avoid adding everything at once—expect 2-3 rounds to use up all items. Use a ladle to scoop out cooked food and broth, eating and chatting as you go. Once the pot empties, add more ingredients.
As the broth simmers, its flavor deepens, becoming richer over time. I love adding garlic oil for an earthy touch. For dipping, soy sauce works perfectly; add chopped chilies or chili oil for heat. Hot Pot is incredibly appetizing, so on cold winter nights, whip it up in your Instant Pot.
