Creamy Seafood Soup with Aphrodisiac Appeal
Ingredients
- seafood (raps, mussels, shrimp, squid, baby octopus) – 500 gr;
- mushrooms (champignons) – 300 gr;
- fish broth (can be replaced with chicken or vegetable) – 2 liters;
- cream (20% fat) – 200 ml;
- onions – 1-2 pcs;
- garlic – 1 clove;
- butter (butter, vegetable) – 1 tablespoon;
- wine (dry white) – 150 ml;
- salt / pepper / greens – to taste.
Cooking
Start by thawing the seafood at room temperature, then clean it thoroughly. To save time, buy pre-shelled shrimp so you avoid removing heads and intestines. Cut large shrimp into two or three pieces, but leave small ones whole. Clean mussels by removing sand and algae, and take out the quill and spinal plate from squid. Cut octopus and other seafood similarly—large pieces into smaller ones, small ones left whole.

Now prepare the sauté. Finely chop the peeled onion and garlic (you can press the garlic), and slice the mushrooms into medium pieces. Heat a mix of vegetable and melted butter in a pan, then add the onion, garlic, salt, and pepper. Sauté until soft, about 3–4 minutes. Once the onion turns translucent, add the mushrooms and cook for 5–6 minutes, stirring constantly. Pour in the dry white wine and simmer uncovered for 3–4 minutes until the alcohol evaporates. Finally, add the strained broth. The soup is almost ready! Bring it to a boil and cook for 5 minutes, then season with salt and pepper and add the seafood.
Important: Seafood cooks very quickly, so do not overcook it.
Stir in the cream after removing the soup from heat; warm it through but do not boil. Let the creamy soup rest before serving so the flavors fully develop. If you like fresh herbs, sprinkle them on top in each bowl.
