Simple Homemade Pickled Cabbage and Carrots

This simple homemade pickled cabbage and carrot recipe uses only basic ingredients you likely already have: white or red cabbage, carrots, water, salt, sugar, and vinegar.

INGREDIENTS

  • 1 large head of white or red cabbage
  • 2 carrots
  • 1 liter of water
  • 1/2 cup of sugar
  • 2 tablespoons of salt
  • 100 ml of white vinegar
  • Peppercorns (to taste)

INSTRUCTIONS

  • Get a large 3-liter jar or plastic food container.
  • Wash the medium-to-large cabbage, discard the outer leaves. Finely chop the cabbage and carrots with a knife, or use a cabbage slicer for speed and safety 🙂.
  • Combine the chopped cabbage and carrots in a large bowl. Squeeze the mixture with your hands for about a minute to release some juice from the cabbage.
  • Fill the clean jar with the vegetable mixture.
  • Prepare the brine: bring water to a boil, add salt and sugar, let it boil for 2 minutes, then stir well with a hand mixer. Remove from heat and add vinegar. The brine is ready!
  • Pour the hot brine over the vegetables in the jar.
  • Seal the jar with a lid and refrigerate or store in a cool, dark, dry place for 24 hours (or 48 hours if you prefer very soft pickled cabbage).
  • Serve with some brine in a plate, or drizzle with sunflower or olive oil. Add to hot dogs and sandwiches.

Your tasty and healthy pickled cabbage is ready. Besides culinary uses, cabbage can be used for medicinal purposes due to its high content of nutrients, vitamins, trace elements, and fiber.

Notes:

This easy pickle boosts immunity, enhances stamina, activates metabolism, stimulates red blood cell production and tissue rejuvenation, lowers cholesterol, and strengthens the heart. It also promotes bowel activity and improves gut microflora.

It is especially beneficial for metabolic issues, recommended for diabetes patients and those with certain gastrointestinal conditions. Medical research suggests pickled cabbage may slow the division of cancer cells, particularly in malignant tumors of the breast, intestines, and lungs.
