Zucchini season is the ideal time to enrich your diet with healthy and tasty creations.

Before you start cooking, gather the following:

• 1 zucchini; • 100 grams of flour; • 2 tomatoes; • 3 chicken eggs; • 300 grams of hard cheese; • 40 grams of dill.

You'll also need a pinch of baking powder, plus salt and ground pepper to taste.

Preparation steps:

Step 1. Wash the zucchini, pat it dry, peel off the skin, coarsely grate it, and squeeze out the excess liquid.

Step 2. Rinse the ripe tomatoes, dry them, drain any extra moisture, and dice them into small pieces.

Step 3. Crack the eggs into a convenient bowl, add a little salt and pepper, and beat them. If you don't have a whisk, a regular fork works perfectly.

Step 4. Add the chopped tomatoes to the beaten eggs and mix thoroughly.

Step 5. Sift the flour and combine it with the baking powder in a separate bowl.

Step 6. Pour the flour mixture into the tomato-egg-squash blend and stir until no lumps remain. The batter should be fairly thick; if it's too runny, add a bit more flour.

Step 7. Cut the cheese into small cubes, chop the fresh dill, and fold both into the prepared batter, mixing well.

Step 8. Lightly grease your muffin tins with vegetable oil.

Step 9. Fill each tin about halfway with the batter.

Step 10. Place the tins in an oven preheated to 180°C (350°F).

Golden, cheesy zucchini muffins fresh from the oven.

These savory vegetable muffins, filled with delicious melted cheese, will be ready in about 23–35 minutes.
