Food experts predict a global wave of violet donuts, cheesecakes, and waffles made from yam is just beginning. Beyond its visual charm, ube is also a nutritious powerhouse. Long recognized as a potent anti-aging ingredient, it's rich in vitamin C, vitamin B6, fiber, potassium, and manganese.
Purple yam (Dioscorea alata, ube) is a plant whose tubers resemble potatoes but boast a vivid purple flesh. It thrives in warm climates and is the sweetest variety of yam, making it ideal for desserts like ice cream. The first ube-flavored ice cream was created for a Hawaiian brand, and in the Philippines, violet yam ice cream is practically a signature treat. Ube is deeply embedded in Filipino cuisine.
One single root can grow up to 2.5 meters long and weigh 70 kilograms. It can be boiled, baked, steamed, dried, or used in baking, ice cream, and cocktails.

“You often see ube turned into jams and pastes called halaya. These are used in rolls, pastries, and ice cream,” says Nicole Ponseca, owner and CEO of Jeepney and Maharlika, a Filipino gastropub and restaurant in New York. “Ube tastes like a mix of vanilla and pistachios—sweet and earthy,” she explains of the root's flavor profile.
The more intense the color of fruits and vegetables, the greater their nutritional benefits. Such vibrant foods brighten any winter, spring, or summer table, and pair wonderfully with meats and herbs for delicious meals.
