Among the cornerstone ingredients of Asian cuisine, ginger and soy sauce rank near the very top. Fresh ginger lends a warm, earthy fragrance that beautifully seasons proteins like poultry. Simmering chicken with this classic pairing guarantees an incredibly flavorful main course.

I turn to this ginger-soy chicken dish again and again in my own kitchen. It can be prepared on the stovetop in a skillet, wok, or traditional Chinese clay pot, or alternatively in a slow cooker or Instant Pot. The outcome is exceptionally tasty — fork-tender meat enveloped in a rich, savory glaze.

For today's version, I relied on my Instant Pot since it finishes cooking the chicken in only eight minutes. The process is effortless, and the resulting meat turns out moist, tender, and nearly sliding off the bone. I opted for drumsticks and wings, though any cut works beautifully — breasts, thighs, drumsticks, wings, or even a whole bird.

Ginger contributes the wonderful aroma and depth, while regular and sweet soy sauce round out the taste profile. If sweet soy sauce is new to you, I recommend exploring it and picking up a bottle — once you try it, you'll find yourself drizzling it on absolutely everything.
