Saturday: Enjoy a night out with loved ones!
Sunday: Slow Cooker Pulled Pork Sandwiches: Let your slow cooker handle the heavy lifting. The evening before, you can place all ingredients into the slow cooker insert and keep it chilled. On Sunday morning, simply take it out of the fridge, set it in the slow cooker, program the timer, and you are all set. Incredibly simple!
Quick Coleslaw: This coleslaw comes together in minutes and also works wonderfully as a make-ahead side dish.
Classic Pound Cake: My grandmother Verdie’s pound cake recipe tastes just as wonderful the day after baking as it does fresh from the oven. Bake it in advance for a hassle-free meal!
Monday: Cashew Chicken: Very fast and simple! For advance preparation, I like to cut the chicken into pieces and keep them in a zip-top bag in the fridge until cooking. Also, mix the sauce ingredients—soy sauce or coconut aminos, rice wine vinegar, tomato paste, honey, garlic, ginger, and red pepper flakes—in advance. Cover with plastic wrap and refrigerate until you are ready to cook.
Tuesday: Fish Tacos: Although these tacos are ready in under half an hour, I like to chop all the vegetables and prepare the pico de gallo in advance to make the process even smoother. You can also combine sour cream and sriracha and store the mixture in the fridge for up to a week.
Wednesday: Skillet Lasagna: This is a favorite from my cookbook that my family adores! I reach for it especially when we crave lasagna but don’t have the time to assemble a full pan—this version is incredibly tasty. Another bonus for hectic evenings: it is ready and on the table in less than 30 minutes!
Thursday: Sheet Pan Teriyaki Salmon with Green Beans: This is a reliable, easy recipe for busy weeknights! To prep ahead, make your homemade teriyaki sauce and store it in the fridge. You can also trim the green beans in advance so that you only need to arrange everything on the sheet pan, pop it in the oven, and dinner is ready!
Friday: Shrimp Scampi: If you like, swap the traditional pasta for my favorite olive oil and garlic zucchini noodles—it is a definite crowd-pleaser!
