My closest friend Nicole shared this recipe with me years back, and it has become a beloved tradition in my home each holiday season. The flavor combination in these little bites is absolutely irresistible. Velvety chocolate pairs with the chewy texture of goji berries, complemented by crunchy almonds and a sharp burst of sea salt, delivering a true flavor celebration on your tongue.
Don't consider yourself much of a baker? No problem at all. You can whip these together in just a few minutes, no oven required, with only four basic ingredients!
Start by tipping two 20-ounce bags of organic chocolate chips into a generously sized glass mixing bowl. Choosing organic matters here because cacao is among the most heavily pesticide-treated crops, and conventional chocolate can be loaded with unwanted synthetic chemicals.
Next, you'll need to melt the chocolate. Simply fill a small saucepan (slightly smaller than your bowl) about one-quarter full with water and bring it to a gentle simmer. Set your glass bowl of chocolate chips on top of the pot... this forms a "double boiler." You can stir in roughly one teaspoon of butter (optional) to encourage smooth melting and lower the risk of burning.
Stir patiently and occasionally until the chocolate turns glossy and fully melted... heavenly... try to resist sneaking a taste from the spoon... though I confess I occasionally do!
Now, coarsely halve approximately eight ounces of almonds, no need to be precise, and add them to the bowl as well. Sprinkle in one-quarter teaspoon of sea salt and stir everything together thoroughly...
Line a baking sheet with a sheet of unbleached wax paper. Using a tablespoon-sized ice cream scoop or spoon, drop roughly one tablespoon of the mixture onto the paper. Feel free to press a few goji berries and almonds onto the top of each cluster for a more cheerful holiday look, as I did here...
Finish with a light dusting of sea salt on each cluster and slide the sheet pan into the fridge. Let them chill for at least one hour until firm. Keep them refrigerated, as they tend to soften and vanish the moment they hit your tongue!
