It's common to find a box of instant oatmeal packets tucked away in a pantry or kitchen, often overlooked. Though they provide a fast morning meal, many people grow weary of the repetitive flavors in standard oatmeal. Instead of wasting money and discarding those packets into the trash, I look for ways to give them a new purpose.
Instant oatmeal packets aren't limited to breakfast—they also create exceptional, chewy oatmeal cookies that stand out from the rest. The beauty of this recipe lies in its flexibility: you can combine various oatmeal packet flavors to produce a unique cookie each time. My personal favorites include Maple & Brown Sugar paired with Apples and Cinnamon, or Strawberries and Cream blended with Blueberries and Cream.
Oatmeal Packet Cookies Made Easy
What You'll Need
1/2 cup butter, at room temperature 1/4 cup white sugar 1/2 cup brown sugar 1 tablespoon milk 1 egg, at room temperature 1/4 teaspoon baking powder 1/2 teaspoon baking soda 6 packets of flavored instant oatmeal (you can use a single variety or a mix) 1 cup all-purpose flour 1/2 cup raisins or chopped nuts (optional)
Step-by-Step Instructions
- Set your oven to 350°F. In a large bowl, cream together the softened butter, white sugar, and brown sugar until the mixture is smooth and fluffy. Next, incorporate the milk and egg, beating until everything is well combined. In a separate bowl, whisk the dry ingredients together. Gradually fold the dry mixture into the wet ingredients until they are evenly incorporated. If desired, stir in the nuts or raisins.
- Drop rounded tablespoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart. Gently press the tops of the dough balls to flatten them to roughly 1/4 inch thickness.
- Bake for 8 to 10 minutes, or until the cookies turn light golden brown and the edges become crisp. Allow them to cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely.
Yields approximately 15-18 cookies
