These raspberry popsicles, with their deep ruby hue, delicate floral notes, and a balance of sweetness and tartness, are a constant presence in my freezer, reserved for leisurely afternoons. When my boys come in from playing outside, eagerly asking for a snack, I can easily grab a popsicle from the freezer and give it to them, confident it will cool them off and bring a smile. I also savor them on summer evenings when the daylight stretches long. Occasionally, I enjoy one alongside Prosecco or my own homemade raspberry liqueur.

Creating Raspberry Popsicles

Raspberries achieve their fullest sweetness, flavor, and antioxidant content only during summer. Like all berries, they are delicate; if harvested prematurely, they lack taste. That's why frozen raspberries are an excellent option throughout the year—they are picked at peak ripeness and flash-frozen to lock in flavor, nutrients, and fruit quality. To prepare these popsicles, begin by lightly sweetening the berries with honey and enhancing their natural acidity with lemon juice. Simmer them together, then strain out the seeds.

Crafting No-Drip Popsicles

Sticky fingers are never pleasant. To avoid drips, stir a small amount of gelatin into the popsicle mixture before pouring it into molds and freezing. The protein in gelatin maintains a semi-solid texture as the popsicles thaw, so they behave more like Jello than a drippy mess—simplifying cleanup. Additionally, gelatin adds a protein boost, making these treats a bit more nutritious.

  • 20 ounces frozen raspberries
  • ½ cup honey
  • Juice of 1 lemon
  • ¼ cup gelatin
  • ¼ cup water
  • 2 tablespoons Creme de Framboise, optional

Step-by-Step Instructions

  1. Combine raspberries, honey, and lemon juice in a saucepan over medium-high heat. Cook until the berries soften and break down, roughly 8 minutes.
  2. Place a fine-mesh strainer over a clean saucepan. Pour the raspberry mixture through the strainer, pressing to extract the pulp. Discard the seeds.
  3. Put the gelatin in a small bowl, add water to cover, and let it sit until softened.
  4. Return the raspberry puree to the stove and bring it to a boil over medium-high heat.
  5. Once the puree is bubbling, whisk in the softened gelatin. Take the saucepan off the heat, stir in the Creme de Framboise, then pour the mixture into popsicle molds.
  6. Place in the freezer overnight or until completely frozen.
  7. To release, dip the bottom of each mold in warm water for a few seconds, then remove and serve.

Tips and Notes

If you can find raspberry honey, use it! It adds delicate floral notes that amplify the raspberry flavor—a nice upgrade. But regular honey works perfectly fine. Creme de Framboise is a sweet, ruby-red raspberry liqueur that intensifies the berry taste. Since only a small amount is used across eight popsicles, I allow my kids to have them, but feel free to skip it. Serve with a Cocktail

For an adult indulgence, serve these popsicles alongside Prosecco enhanced with a dash of Creme de Framboise or another raspberry liqueur.
