Hummus and Pomegranate Canapés

Hummus-Pomegranate Bites

Ingredients:

  • 30 salty crackers;
  • ⅔ cup hummus;
  • ⅓ cup pomegranate seeds;
  • 3 tablespoons crumbled feta cheese;
  • fresh mint leaves for garnish.

Preparation

  1. Evenly spread hummus onto each cracker. If you prefer, replace the crackers with mini tart shells.
  2. Top with pomegranate seeds, feta cheese, and finely chopped mint leaves.
  3. Serve and enjoy.

Quick Spanakopita Rolls

Speedy Spanakopita

Ingredients:

  • 280g frozen spinach (thawed);
  • 1 tablespoon olive oil;
  • 1/2 onion, thinly sliced into rings;
  • 2 green onions, thinly sliced;
  • 2 garlic cloves, minced;
  • ½ teaspoon dried oregano;
  • ½ teaspoon red pepper flakes (optional);
  • salt and freshly ground black pepper to taste;
  • ¼ cup freshly chopped dill;
  • 1 teaspoon lemon zest;
  • 1 cup crumbled feta cheese;
  • a pinch of nutmeg (optional);
  • 10 sheets of filo dough;
  • ¾ cup melted butter.

Preparation

  1. This appetizer requires a bit of effort, but you'll end up with plenty of delicious bites! Preheat the oven to 175 degrees and line two medium baking sheets with parchment paper. Using a clean kitchen towel, squeeze out all excess moisture from the thawed spinach. Transfer the spinach to a large bowl.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onion and green onions and cook for 5 minutes, stirring occasionally. Then stir in the garlic, oregano, and red pepper flakes, and season with salt and pepper. Transfer this mixture to the bowl with the spinach.
  3. Add the dill, lemon zest, feta cheese, and nutmeg to the spinach mixture. Stir until well combined. Taste and adjust seasoning with more salt and black pepper if needed.
  4. Remove the filo dough from the fridge and cover it with a slightly damp kitchen towel. Take one sheet, lay it on a clean surface, brush it with melted butter, then place another sheet on top. Brush that sheet with butter as well. Cut the stacked sheets into six equal long strips.
  5. Place a tablespoon of the filling near the corner of one strip, then roll it up tightly into a roll. Repeat with the remaining strips until all filling is used.
  6. Arrange the rolls seam-side down on the prepared baking sheets, and brush the tops with melted butter. Bake until golden and crispy, about 20 to 23 minutes. Let cool slightly before serving.

Herbed Goat Cheese Dip

Goat Cheese Sauce with Fresh Herbs

Ingredients:

  • 1 cup crumbled goat cheese, at room temperature;
  • ½ cup ricotta cheese (cottage cheese works as a substitute);
  • 2 green onions, finely chopped;
  • ¼ cup finely chopped fresh parsley;
  • 2 teaspoons lemon zest;
  • 2 tablespoons lemon juice;
  • salt and freshly ground black pepper to taste;
  • olive oil;
  • grissini or breadsticks for serving.

Preparation

  1. In a food processor or blender, combine the goat cheese and ricotta (or cottage cheese) and blend until smooth, about 1 to 2 minutes. Transfer to a bowl and add the green onions, parsley, lemon zest, and lemon juice. Season with salt and pepper. Mix everything together thoroughly.
  2. Garnish with a sprinkle of parsley and a drizzle of olive oil. Serve alongside grissini or breadsticks.

Sweet and Salty Feta Cubes

Honey-Pistachio Feta Bites

Ingredients:

  • Feta cheese;
  • honey;
  • chopped pistachios.

Preparation

  1. Cut the feta into small cubes and thread them onto skewers or toothpicks. Dip each cube into honey, allowing the excess to drip off.
  2. Immediately roll the honey-coated cubes in finely chopped pistachios.
  3. Refrigerate until ready to serve, if desired.
