Beat Bloat with This Refreshing Thai Spiralized Summer Salad
Yields 2-3 portions Ingredients
- 1 large English cucumber, run through the spiralizer
- 2-3 extra large carrots, run through the spiralizer
- a small handful of fresh cilantro leaves, roughly chopped
- 1 Tbsp raw honey
- 3 Tbsp apple cider vinegar
- 1 Tbsp sesame oil
- 1 fresh garlic clove, finely minced
- sea salt and freshly cracked black pepper, adjusted to your preference
- 1/3 cup roasted cashews, lightly crushed if you like
- 1 Tbsp sesame seeds
Directions
- Grab a glass bowl or jar and mix together the vinegar, sesame oil, honey, garlic, sea salt, and pepper; whisk vigorously until emulsified to form your dressing.
- Place the spiralized vegetables and cilantro into a medium glass bowl and toss gently.
- Drizzle the dressing over the top and toss until evenly coated.
- Sprinkle with the cashews and sesame seeds, then serve right away!
