Beat Bloat with This Refreshing Thai Spiralized Summer Salad

Beat Bloat with This Refreshing Thai Spiralized Summer Salad

Yields 2-3 portions Ingredients

  • 1 large English cucumber, run through the spiralizer
  • 2-3 extra large carrots, run through the spiralizer
  • a small handful of fresh cilantro leaves, roughly chopped
  • 1 Tbsp raw honey
  • 3 Tbsp apple cider vinegar
  • 1 Tbsp sesame oil
  • 1 fresh garlic clove, finely minced
  • sea salt and freshly cracked black pepper, adjusted to your preference
  • 1/3 cup roasted cashews, lightly crushed if you like
  • 1 Tbsp sesame seeds

Directions

  1. Grab a glass bowl or jar and mix together the vinegar, sesame oil, honey, garlic, sea salt, and pepper; whisk vigorously until emulsified to form your dressing.
  2. Place the spiralized vegetables and cilantro into a medium glass bowl and toss gently.
  3. Drizzle the dressing over the top and toss until evenly coated.
  4. Sprinkle with the cashews and sesame seeds, then serve right away!
