Having friends pop by unexpectedly doesn't have to be stressful when you have this filo dough spinach pie in your repertoire. This savory pastry offers a wonderful opportunity to demonstrate your cooking skills while providing a truly filling dish for everyone at the table.

The recipe itself is quite unconventional yet remarkably straightforward. Combining cottage cheese, feta, fresh greens, and spinach, the filling is wrapped in store-bought filo pastry, giving the impression of hours spent in the kitchen. Your visitors will never suspect the dough came ready-made!

Quick Filo Spinach Pie to Wow Your Visitors

Ingredients

  • Cottage cheese – 150 g
  • Feta cheese – 150 g
  • Filo dough – package
  • Egg – 2 pcs.
  • Onions – 2 pcs.
  • Green onions – bunch
  • Garlic – 2 pcs.
  • Spinach – 200 g
  • Parsley – bunch
  • Olive oil – 3 tablespoons

Cooking method

  1. Get your oven and baking pan ready. Set the temperature to 180 degrees. Apply a thin coating of oil to a 24 x 24 cm square or circular pan.
  2. Pour 3 tablespoons of olive oil into a sizable frying pan and warm it over medium heat. Cook the onions, scallions, and garlic until they become soft and develop a light golden color.
  3. Thaw the frozen spinach completely and press out as much water as possible—using a colander works well, or you can place a second bowl on top of the spinach inside a larger bowl to press the liquid out. Stir the spinach and parsley into the skillet and let everything cook for roughly 2 minutes until the greens soften.
  4. Take the pan off the burner and allow the mixture to cool down completely—this step matters a lot.
  5. Crack the eggs into a medium-sized bowl, then mix in the cottage cheese and crumbled feta. Fold in the cooled spinach blend.
  6. Lay a single sheet of filo pastry across the bottom of the greased pan and give it a gentle brushing of olive oil or melted butter.
  7. Add a second layer of pastry on top, spread with butter, and continue this layering until you've built up 4 to 6 sheets. Don't worry if the dough extends up and over the sides of the pan—that's perfectly fine.
  8. Pour the spinach mixture across the base in an even layer, then fold the overhanging dough edges inward over the filling. Coat with butter, and arrange the rest of the filo sheets on top, brushing each one with butter as you go.
  9. Tuck any leftover dough around the edges of the pan to fully enclose and seal the filling inside.
  10. Place the dish in your preheated oven and bake for 30-40 minutes, or until the surface turns a beautiful golden brown.

Slice the finished pie into pieces and serve it warm.
