After a brief visit to Vietnam, I returned home. During two days in Ho Chi Minh City, I sampled food from nearly every street corner. One standout was Ca Ri Ga, the Vietnamese take on Indian curry, which I thoroughly enjoyed.
Curries are a favorite of mine, and this Vietnamese interpretation did not disappoint. Packed with perfectly cooked chicken, carrots, and potatoes, it's lighter yet still packed with flavor, largely due to the generous use of fish sauce.
Once back, I immediately set out to create a recipe to share. Preparing an excellent chicken curry is simpler than you imagine if you have the right ingredients. Nowadays, lemongrass, pre-bottled curry powder, and fish sauce are readily available at any grocery store. With those on hand, you can whip up this dish in just 30 minutes.
