When summer garden tomatoes are at their ripest, they create the most flavorful and juicy tomato salad—ideal alongside a rustic loaf of bread!
Garden Tomato Salad
This dish is my husband Tommy’s go-to summer favorite, especially on sweltering evenings when cooking feels like a chore. We grab a crusty loaf, sometimes toast it and rub a raw garlic clove over the surface. Then we enjoy the tomatoes and let the bread soak up all those incredible juices pooled at the bottom (so delicious you might be tempted to drink them!). Naturally, the bread is completely optional!
You simply cannot find such juicy tomatoes at the grocery store; they never match the ones from your garden that you anticipate all summer. So if you have an abundance of tomatoes in your garden or spot some at the farmer’s market, whip up this salad—you’ll thank me later!
The ingredient list is short, so the flavor truly depends on the finest tomatoes and a premium extra virgin olive oil. While Tommy often eats this as a main course, you can also serve it as a side alongside grilled chicken or fish.
Fresh Tomato Salad
Ripe, late-summer garden tomatoes produce the most succulent and flavorful tomato salad, wonderfully complemented by a crusty loaf of bread!
What You'll Need
- 5 large (8 cups) ripe red heirloom or beefsteak tomatoes, diced into 1-inch cubes
- 1/2 cup red onion, finely chopped
- 8 to 10 fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, minced
- Kosher salt and freshly ground black pepper, to taste
- Good crusty bread, for serving (optional)
Instructions
- In a large bowl, combine the diced tomatoes, red onion, basil, olive oil, and minced garlic. Season generously with salt and pepper.
- Let the mixture sit at room temperature for about 20 minutes to allow the flavors to meld (the tomatoes will release their juices, forming a light dressing). Toss well.
- Just before serving, toss the mixture again and divide evenly among 4 bowls. Enjoy with crusty bread if desired.
