Tomato salad with feta cheese

You will need: 300 grams of unsalted feta cheese, 5 tomatoes, half a glass of peeled sunflower seeds, 2 tablespoons of sesame oil, vegetable oil and herbs to taste.
- Dice the tomatoes and feta cheese into uniform cubes.
- Toast the sunflower seeds in the oven and finely chop the fresh herbs.
- Combine everything in a salad bowl, toss gently, and top with the toasted seeds.
Trout with champagne
Elegant Fish Dish with Sparkling Sauce
You will need: one and a half kilograms of pink trout, 200 grams of butter, a bottle of champagne, a tablespoon of flour, juice of a quarter of a lemon, half a glass of sour cream, 4 yolks, 3 sprigs of thyme, parsley, salt and pepper to taste.
- Clean and rinse the trout, then season with salt and spices. Grease a baking sheet with butter, scatter parsley leaves on it, place the trout, and bake at 175°C.
- After 5 minutes, pour an eighth of the champagne into the baking sheet and continue baking for another 20 minutes.
- Melt a tablespoon of butter, stir in the flour, and cook for 2 minutes. Pour in a quarter bottle of champagne and let the sauce simmer for 10 minutes.
- Drain the cooking liquid from the trout and add it to the sauce. Mix the yolks with sour cream, lemon juice, and 3 tablespoons of champagne, then incorporate into the sauce.
- Gradually whisk in the remaining butter and season with salt.
- Remove the skin from the trout, place the fish on a serving dish, and pour the prepared sauce over it.
Canape with bacon
Savory Bites with a Spicy Kick
You will need: white bread, 100 grams of smoked bacon, half a red pepper, 2 teaspoons of paprika, bell pepper, 120 grams of hard cheese.
- Cut the bread into small cubes suitable for canapés, place in a bowl, sprinkle with paprika, toss to coat, and let sit for 10 minutes.
- Dice the bacon and render it in a pan. Remove seeds from the hot pepper, chop finely, and add to the bacon.
- Fry the bread cubes in the rendered bacon fat, then let them cool.
- Peel and dice the bell pepper, and cut the cheese into bite‑sized pieces.
- Assemble the canapés and serve.
Pistachio dessert

You will need: 100 grams of pistachios, 100 grams of sour cream, 3 tablespoons of milk, 10 grams of gelatin, 2 tablespoons of powdered sugar, 50 grams of chocolate.
- Finely chop the pistachios, reserving some for decoration. Whip the sour cream with powdered sugar and fold in the chopped pistachios.
- Hydrate the gelatin in water, let it swell, then dissolve it in a water bath. Cool to room temperature and stir into the sour cream mixture.
- Divide the dessert among serving bowls and refrigerate until set.
- Garnish with grated chocolate and the reserved pistachios.
Grapefruit dessert with liqueur
Warm Citrus Treat with a Boozy Twist
You will need: 2 grapefruits, 4 teaspoons of fruit liqueur, 4 tablespoons of sugar, 2 teaspoons of butter.
- Wash the grapefruits and cut them in half. Place them cut‑side up on a grill pan.
- Sprinkle with sugar, brush with butter, and drizzle with liqueur. Cover and cook for 10 minutes.
