Perfect Pancake Dough Recipe

Cooking. Crack two eggs into a blender, add a pinch of salt, and beat for two to three minutes. Then pour in a glass of milk or whey, butter, sugar, vanillin, and flour. Blend again for roughly the same duration until smooth, then add the remaining milk. The batter should be lump-free and have a consistency similar to very thin sour cream or cream with 33% fat content.

Because flour and egg sizes vary by brand, you may need to adjust—add a bit more flour if the batter is too runny, or extra milk if it’s too thick. After each addition, blend again to keep the mixture uniform.

The key to flawless thin pancakes is a quality frying pan. With the right pan, the batter won’t stick, it bakes evenly, and whey-based pancakes turn out as delicate as lace.

Heat the pan, then reduce the heat. Grease it with vegetable oil for savory pancakes or butter for sweet ones. Pour in the batter and quickly but gently spread it across the surface. Be patient—wait until the pancake is golden brown on one side before flipping. This takes about one to one and a half minutes, depending on thickness and heat. The pancake is ready to flip when the surface looks firm and tiny bubbles appear. If the batter still looks wet, lower the heat and wait a bit longer.

A silicone brush is handy for greasing the pan. For savory pancakes, you can spear a small potato or onion chunk on a fork, dip it in oil, and use it to grease the pan. As the potato or onion fries, it imparts a subtle flavor to the pancakes.

If you’re aiming for a lighter version, adjust the proportions—rice, coconut, oat, and especially buckwheat flour behave differently.

Ingredients:

  • 3 tablespoons of butter;
  • 4 delicious apples (medium, peeled and thinly sliced);
  • 5 tablespoons of sugar;
  • ¼ teaspoon ground cinnamon;
  • ⅛ teaspoon ground nutmeg;
  • ½ cup ricotta cheese or cottage cheese.

Cooking. Melt butter in a pan, add apples, three tablespoons of sugar, cinnamon, and nutmeg. Simmer for about five minutes, then transfer to a plate to cool. Mix the remaining two tablespoons of sugar with ricotta or cottage cheese, then fold in the cooked apples. Gently combine and spoon onto pancakes. Place the filled pancakes in a greased ceramic dish, top with sour cream mixed with sugar, and bake at 150–160°C for ten minutes.

Pancakes with fried eggs

Savory pancakes with a runny egg center

Ingredients:

  • 6 teaspoons of Dijon mustard;
  • 1 ½ cup grated Parmesan (or any other hard cheese of your choice);
  • 6 medium eggs;
  • salt and pepper to taste.

Cooking. Prepare the salted pancake dough and stir in chopped green onions, fresh dill, parsley, or basil to taste. Once the pancakes are ready, preheat the oven to 205°C. Line a baking sheet with parchment paper and lay out the pancakes. Spread each with mustard, sprinkle with grated cheese, and crack a raw egg on top. Fold the edges slightly to contain the egg, season with salt and pepper, and bake until the egg whites are set but the yolk remains runny—about 10–11 minutes. Serve with extra fresh herbs, onions, and cheese.

Tiramisu: Mascarpone + Cocoa

Ingredients:

  • 240 g of mascarpone cheese;
  • ¼ cup powdered sugar;
  • a pinch of vanillin;
