This simple Carrot Cake Smoothie delivers all the flavor of a delicious slice of carrot cake, yet it's crafted from healthy, wholesome fresh ingredients. It's naturally sweet, vegan, and gluten-free!

With Easter just around the corner, I figured now is the perfect moment to offer something a bit lighter than the usual cakes and sweets (which you can find all here). That's why I whipped up this incredibly good-for-you vegan and gluten-free Carrot Cake Smoothie.

There's so much to adore about this smoothie. It takes just 5 minutes to prepare and is loaded with nutritious goodness—the mix of nuts, veggies, and fruits provides a fantastic source of antioxidants, vitamins, and protein. Plus, it tastes just like dessert, but without the calories, sugar, or any guilt.

Sweet, tasty carrots are blended with the ideal mix of cinnamon and spices. Add in sliced banana and crunchy walnuts, and you've got yourself a healthy slice of carrot cake in a glass! Before blending everything, I like to juice the carrots in my juicer (so I can use the leftover pulp for other recipes like this Carrot Cake Banana Bread).

However, if you don't own a juicer and don't mind a slightly chunky texture, feel free to finely grate the carrots and toss them into the blender with the rest. Or, if you're feeling lazy as I sometimes am, just grab some organic 100% carrot juice from your local store. This smoothie is very filling—a single glass will keep cravings at bay until lunch or dinner. It's also an excellent pre- or post-workout energy booster. I love doubling the ingredients and sipping on it throughout the day between meals—it's the easiest way to hit my 5-a-day.

  • 200ml fresh homemade (or store-bought) carrot juice
  • 1 banana
  • 1 tbsp chopped walnuts
  • ¼ tsp ground cinnamon
  • a pinch of ground ginger
  • a pinch of nutmeg
  • 2 ice cubes (optional)
  • 1 tsp maple syrup (optional)

Instructions

  1. Place all the ingredients in a powerful blender and blend until smooth and creamy.
  2. Pour into a glass and serve.
