What you need for the meatballs:
- 500g ground beef
- 250g ground pork
- Finely chopped onion
- 1 crushed garlic clove
- 100g breadcrumbs
- 1 egg
- 5 tablespoons whole milk
- Salt and pepper, to taste
What you need for the sauce:
- A small amount of sunflower or olive oil
- 40g butter
- 40g wheat flour
- 150ml vegetable stock
- 150ml beef stock
- 150ml heavy cream
- 2 teaspoons soy sauce
- 1 teaspoon Dijon mustard
- Begin by mixing together the minced beef and minced pork in a bowl, then work in the finely chopped onion, crushed garlic, breadcrumbs, and egg, stirring until smooth. Pour in the milk, then season with salt and pepper.
- Shape the mixture into small, round balls and arrange them on a plate. Cover and chill in the fridge for two hours—this helps the meatballs hold their form while cooking.
- Heat a small amount of oil in a pan over medium heat. Gently add the meatballs and cook them until browned on every side.
- Set your oven to 180 degrees. Once the meatballs develop a golden crust, move them to a baking sheet and roast for 30 minutes.
- For the cream sauce, start by heating butter in a skillet. Stir in the flour and cook for two minutes. Add the vegetable and beef stock while continuing to stir, then mix in the heavy cream, soy sauce, and mustard. Allow the mixture to bubble until it thickens.
