Dinnertime often falls victim to the chaos of everyday life. Between shuttling my kids to their many activities and juggling my own packed agenda, carving out moments to cook a flavorful, nourishing dinner for my crew isn't always easy. I'm constantly on the lookout for fresh ideas that keep meals exciting yet realistic for a hectic weeknight.
On evenings when our calendar is bursting at the seams, firing up the crockpot has become a lifesaver for my family. The peace of mind that comes from knowing dinner is already handled by mealtime is priceless. These crockpot buffalo chicken lettuce wraps strike the ideal balance between inventive and wholesome, doubling as something genuinely fun to eat. A total triumph in my kitchen!
Once spring rolls around, my home turns into a whirlwind. With both of my sons on competitive travel soccer squads, we typically have either practices or matches five days out of the week. That's why on school days I focus on staying as structured as possible, smoothing out the shift between school, homework, and extracurriculars. I'll be honest—I don't always pull it off perfectly, but I've discovered that plotting out meals ahead of time with straightforward, nutritious components is half the struggle.
One lesson I've picked up over the years: keeping things simple and nourishing is always the winning move. The instant I overcomplicate dinner, irritation creeps in, and frankly, it isn't worth the headache. With Borden® Cheese and a few refrigerator staples, I can throw together a wholesome, mouthwatering dinner loaded with protein and calcium for my family in next to no time.
Believe it or not, this recipe calls for just five ingredients, yet it delivers a massive wallop of taste. Simply place your boneless chicken breasts into the crockpot along with a single packet of ranch seasoning and let it cook on high for 3-4 hours, until the meat falls apart with minimal effort.
Next, pour in some Buffalo sauce and give the chicken a thorough stir.
Scoop the saucy mixture into individual lettuce leaves and crown each one with the new Borden® Cheese Thick Cut Shreds. These Thick Cut Shreds are PHENOMENAL for layering on rich, cheesy goodness. They melt like a dream over the hot chicken, too!
For our buffalo chicken, we reach for the Mild Cheddar variety of Borden® Thick Cut Shredded Cheese. Since my kids aren't big fans of blue cheese, cheddar serves as a wonderful substitute.
Borden® Cheese is crafted from premium, wholesome ingredients and elevates this dish, contributing a smooth, cheesy richness to every forkful.
I'm absolutely thrilled with how this recipe came together, and I have no doubt it will earn a permanent spot in our weeknight lineup for years to come.
Drop me a line if you give these a go…I'm confident you and your loved ones will be hooked!
